bruschetta
Bruschetta


Ingredients: bread , 2 cloves of garlic , olive oil , ripe tomatoes , salt.

Preparation: cut the bread in slices and divide into equal parts , rub with garlic , season with olive oil , salt and pepper and put in the preheated oven on  " grill " . Before the bread becomes too crispy , remove from the oven and add the diced tomatoes , a dash of olive oil and oregano . Return to the oven for a few minutes and serve hot to the table.

Penne with basil and olive oil


Ingredients for 4 people: 400 gr. of penne , a large sprig of basil, 1 red and 1 yellow pepper , 2 anchovy fillets , ½ cup of olive oil , salt.

Preparation: Roast the peppers on the grill, carefully peel them and cut them into strips. Finely chop the basil and the anchovies . Mix the anchovies with the oil and add a pinch of salt . Cook the penne, drain when al dente and cool them . Put them in a bowl, sprinkle with the chopped pepper and basil and season with the sauce of anchovies and olive oil. Stir well and serve.

Bean salad


Ingredients for 5 people:

400 gr. cannellini beans , 2 cans of tuna , 1 small onion, 200 gr. of olive oil , 40 gr. of  black olives , vinegar .

Preparation: Boil the beans , drain and toss with the tuna in oil, chop the onion in small pieces , olives and olive oil, sprinkle a little of vinegar and cook for about 1 hour before serving.

Spaghetti with pesto and almonds


Ingredients for 4 people:

-350 Gr. spaghetti
-3 Cloves of garlic
-30 Basil leaves
-a dozen almonds
-1 dl. of extra virgin olive oil
-1 Ripe tomato
-100 Gr. grated pecorino cheese
-salt and pepper q.b.

Preparation: Put in a blender the garlic, basil and tomatoes without the skin and seeds and cut into pieces. Add a drizzle of olive oil. Fry the almonds in boiling hot olive oil, then drain and chop. Add pesto, continue mixing alll incorporating more oil, so as to obtain a smooth sauce to perfection and a pinch of pepper. Cook the spaghetti, drain it al dente and toss with the pesto. Serve with grated pecorino cheese.
